I love this super easy Summer Mango Salsa recipe. It couldn’t be more easy to make. And it’s so bright in flavor and color, it’s also beautiful! Lunch for me is often tacos. The are easy to make, I can get ample protein, and season them with good for you salsa like this one. This recipe will have you going back to it again and again. Enjoy!
Summer Mango Salsa Recipe
Equipment:
Medium sized bowl – These are my favorite stackable bowls
Spoon
Knife

Recipe:
1 Cup mango
3 Green onions chopped – just the greens
2 Tablespoons lime juice – this is my favorite one if I am. not using fresh
Pinch of Redmonds Real Salt
Optional – 1/2 Jalapeno diced
- Dice the mango into 1/4″ pieces and add to the bowl.
- Chop onion greens into 1/4″ pieces and add to the bowl. You could add the onion whites as well if you like I just prefer the more mild flavor of the greens, so only use that portion.
- Remove seeds and ribs, and dice Jalapeno – this is optional if you want a little heat
- Add lime juice and stir.
- Add a pinch of salt, stir, taste and adjust if needed.
Liberally add to tacos, salads or burgers or whatever suits you!
