This Gluten Free Super Vegi Tater Tot Hotdish is all about comfort. And in MN winters, sometimes we need a little comfort and warmth in our bellies, and kids love this. I am not about kicking all comfort foods out, but rather “zhuzhing” up the old favorites into a more healthy version. In this case, I’ve added extra veg and plenty of animal protein to keep families sustained and satiated.
Hotdish (or casserole) is a classic, old school Minnesota dish. Toss a few ingredients together with a can of cream of “something” soup, bake, and your good to go! As a kid I remember having tuna casserole with potato chips on top fairly often, YUM!
I think everyone’s Minnesota family has a classic hotdish they make. Tater Tot Hotdish is well known in Minni, but funny enough I had never had it until I was an adult. It is super yummy, but a little low on veg typically. Since my kiddo loves it, I took the classic recipe and souped it up with a bunch of veggie’s, to bump up it’s nutritional value.
