I was gifted this lovely recipe from a beautiful far away friend, while we were in a yoga teacher training program. Here sweetheart would make her lunch each day, and included in her lunch was a small package of these apples with lots of flavor and bite. It was such a wonderful gift each day that she opened up, filled with love. It warmed my heart! Oh and the best part for me… she shared!

2 Granny Smith Apples
3-4 T of Lime Juice
Fresh Ginger Root
Core and cube the apples into about 1/2″ pieces and place in a bowl. Add lime juice, this is really to your taste, I like mine more tart, so a little more lime juice for me. Using a planer or grater, grate the fresh ginger over the apples, I find the grated ginger a little hard to measure, so I grate about 3/8″ of the root or so. Stir with a spoon, or if your bowl has a cover, cover and shake up. The lime juice will keep the apples from browning for days in the fridge. Enjoy!
