Are you a love it or leave it on this one? I know not everyone is a lover of this.
But… I am a LOVE it!
This recipe has a special place in my heart. As a kid I had big love for blue cheese dressing and… so did my Italian Grandfather. Every time we went out for family dinner, my grandfather would order this on his salad… and as a kid, I instantly loved it too. Which is funny, because it’s not a typical kid type of food!
So when I have blue cheese dressing, I always think of him, and my fond childhood memories of him.
And so my love for blue cheese continued into adulthood. But I have had a hard time finding a really good dressing in the store. The one I really loved got discontinued.
So I have been on the hunt again…
And then I thought to myself, could it be easy enough to make?
And what the heck is in this dressing? … besides… you know blue cheese!
So I searched up recipes, and played around a bunch, and came up with a recipe I am really happy with and is so yummy!
A couple things to note…
One thing I discovered in regards to blue cheese recipes is that they typically call for both mayonnaise, and sour cream. I figured out I like it best, when it is a small amount of mayo, and primarily sour cream based.
When the mayo gets more predominant in the recipe, the color is darker, and more tan, and the flavor is more vinegary almost bitter, which is not as good to me. So I bumped up the sour cream in this recipe to take the heavier mayo flavor to a minimum.
Another note on the dressing, is that I tried a couple different sour creams, one was really thick, one was more moderate in thickness. The moderately thick option made the better dressing. This ended up being Organic Valleys Sour cream. The heavier sour cream ended up making it really think, and not pourable – if you find yourself in this situation, you may need to add water.
And lastly, I like my dressing to have the bigger chunks of blue cheese. If you don’t like it that way, then just chop the cheese more finely when you make it.
So that is my assessment of a good Blue Cheese recipe 😆😆😆. And now, after talking about it so much! I think I need some!
